1 heaping cup mashed ripe bananas (approx. 3–4 bananas)
2 large eggs, room temperature
1 cup buttermilk
1/3 cup vegetable oil
1 tsp pure vanilla extract
1 1/2 cups semi-sweet chocolate chips
Instructions
Preheat your oven to 400°F and line a muffin tin.
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until uniform.
In a separate bowl, mash the bananas until smooth and whisk in the eggs, buttermilk, oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
