Ingredients

Granulated sugar, 2/3 cup (or coconut sugar)
Large eggs, 2 (or flax eggs for vegan)
Mashed bananas, 3 (very ripe)
Vanilla extract, 1/2 tsp (omit for nut-free)
All-purpose flour, 1 1/2 cups (or whole wheat/gluten-free)
Baking soda, 1 tsp
Salt, 1/2 tsp
Semi-sweet chocolate chips, 1 cup (or dark chocolate)
Instructions
Preheat oven to 350°F. Butter and flour a 9.25″x5.25″ loaf pan
Cream butter and sugar in a mixer with paddle attachment until light and fluffy (2-3 minutes)
Whisk in 2 lightly beaten eggs until fully incorporated
Mix in mashed bananas and vanilla extract
Gradually add flour, baking soda, and salt, folding gently to avoid overmixing
Fold in chocolate chips
Transfer batter to prepared loaf pan
Bake for 60 minutes, or until a toothpick inserted comes out mostly clean
Let cool fully in pan before slicing
