Ingredients
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup buttermilk
1/2 cup vegetable oil
2 tsp vanilla extract
1 1/2 cups semisweet chocolate chips
Instructions
Preheat your oven to 425°F and grease a 12-cup muffin tin.
Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, whisk the eggs, buttermilk, oil, and vanilla until combined.
Fold the wet ingredients into the dry ingredients until just combined; do not overmix.
Fold in 1 cup of the chocolate chips.
Divide the batter evenly into the 12 muffin cups.
Sprinkle the remaining 1/2 cup of chocolate chips over the tops of the muffins.
Bake at 425°F for 5 minutes, then reduce the heat to 375°F and bake for another 15-17 minutes until a toothpick comes out clean.
Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
If you don’t have buttermilk, add 1 tsp of lemon juice to 1 cup of regular milk and let sit for 5 minutes. Use Dutch-process cocoa for a deeper color and flavor. Store in an airtight container at room temperature for up to 3 days.
