Description

Indulge in this luxurious chocolate mousse cake, which pairs a dense, flourless brownie-style base with a cloud-like layer of airy, rich chocolate mousse. Designed for both casual weeknight treats and elegant birthday celebrations, this recipe strikes the perfect balance between professional confectionery results and home-baking simplicity. Experience a sophisticated harmony of bittersweet chocolate and velvety cream in every bite.

Ingredients

Scale

14 oz semisweet chocolate, divided
1/2 cup unsalted butter, softened
3/4 cup granulated sugar, divided
4 large eggs, separated
1/4 cup all-purpose flour
2 cups heavy cream, cold
Pinch of salt

Instructions

Preheat oven to 350°F and grease a 9-inch springform pan.
Melt 6 ounces of chocolate with butter over low heat until smooth.
Whisk in 1/2 cup sugar, egg yolks, flour, and a pinch of salt.
Beat egg whites until foamy, gradually adding remaining sugar until stiff peaks form.
Fold the meringue into the chocolate mixture in two batches.
Spread batter into the pan and bake for 18 to 20 minutes; cool completely.
Heat 1/2 cup of cream until steaming and pour over remaining 8 ounces of chopped chocolate; stir until smooth.
Once the chocolate ganache base is cool, whip the remaining 1 1/2 cups of cream to soft peaks.
Fold the whipped cream into the chocolate mixture.
Spread the mousse over the cooled cake layer and refrigerate for at least 4 hours before serving.

Notes

Ensure all ingredients are at room temperature before starting the cake base. The cooling of the cake is essential to prevent the mousse from melting upon application. Store leftovers in the refrigerator for up to 3 days.
