3 tbsp unsalted butter, melted
266g granulated white sugar
4 large eggs
227g bittersweet chocolate, chopped
2 tsp pure vanilla extract
1.3 cups heavy cream, very cold


Instructions

Pulse Oreos in a food processor to fine crumbs.
Add melted butter to crumbs and pulse until texture resembles wet sand.
Press mixture firmly into the bottom and sides of the pie dish.
Bake crust for 10 minutes, then cool completely on a wire rack.
Whisk eggs and sugar in a saucepan over medium-low heat until temperature reaches 160°F.
Remove from heat and stir in chocolate until smooth.
Stir in vanilla extract and allow to cool to room temperature.
In a separate bowl, whip the cold heavy cream to soft peaks.
Fold whipped cream into the cooled chocolate mixture until uniform.
Pour filling into the prepared crust and refrigerate for at least 6 hours to set.
