Ingredients
Warm water 1/2 cup (120ml)
Warm whole milk 1/2 cup (120ml)
Instant yeast 2 1/4 tsp (7g)
Granulated sugar 1/4 cup
Unsalted butter 56g (4 Tbsp), softened
Bread flour 390g (3 cups)
Salt 1 tsp
Egg white 1, optional
Ground cinnamon 2 tsp
Melted butter 14g, for topping
Instructions
Whisk together warm water and warm milk in a large bowl.
Add instant yeast, 1/2 tsp sugar, and let sit until frothy (5-10 minutes).
Stir in remaining sugar, softened butter, and egg white (if using).
Gradually add bread flour and salt, mixing until combined.
Knead on floured surface until smooth, about 5 minutes.
Cover and let rise in warm place for 1 hour or until doubled.
In a bowl, mix 1/2 cup sugar and 2 tsp cinnamon.
Place dough in a greased 9×5-inch loaf pan.
Sprinkle cinnamon-sugar mixture evenly over dough.
Cover and let rise for 1 hour.
Preheat oven to 350°F (180°C).
Brush with melted butter (optional), bake 45 minutes.
Cool before slicing.
Notes
Substitute all-purpose flour for bread flour.
Non-dairy milk can replace whole milk.
Adjust cinnamon amount to taste.
Store in airtight container for up to 3 days.
