Description
A warm, spiced banana bread layered with cinnamon streusel and a moist crumb from sour cream. Perfect for cozy mornings or snacks with a comforting crunch and sweetness.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter, cold
1 cup sugar
1/4 cup brown sugar
1/2 cup sour cream or Greek yogurt
1 tsp pure vanilla extract
2–3 ripe bananas
1 tsp cinnamon
Instructions
Prepare the Crumb Topping
Combine flour, both sugars, and cold butter in a bowl. Mix with hands until crumbly.
Mix Dry Batter Ingredients
Whisk flour, baking soda, and salt in a bowl.
Blend Wet Batter
In a large bowl, stir melted butter, sugars, sour cream, egg, and vanilla until smooth.
Incorporate Bananas
Gently fold in mashed bananas.
Combine Batters
Add dry ingredients to wet. Mix until just blended.
Layer the Bread
Pour half the batter into a greased 9×5-inch pan. Sprinkle 1 tsp cinnamon over it. Add remaining batter.
Add Toppings
Spread streusel mixture over the top. Bake at 325°F for 40–45 minutes until golden and a toothpick inserted comes out clean.
Notes
Substitute almond milk or coconut sugar if desired. Use a 9×5-inch loaf pan. Cool completely before slicing for optimal texture.
