Ingredients
Olive oil 1 tbsp
Shallot 1 large (finely diced)
Garlic 2 cloves
Chicken sausage 12 oz (halal-certified preferred)
Orzo 2 cups
Dried herbs 1 tsp oregano + 1 tsp basil
Chili flakes 1/4 tsp
Chicken broth 4 cups (low-sodium)
Half and half 1/2 cup (or coconut milk)
Spinach 2 cups
Parmesan 1/3 cup
Salt & pepper To taste
Instructions
Heat oil in large skillet over medium heat until shimmering
Add shallot and cook 3 minutes until softened
Stir in garlic and cook 1 minute (maximum 20 seconds more)
Pat chicken sausage dry with paper towels
Add pieces to pan and cook 5 minutes until golden crust forms
Use spoon to break into medium chunks while cooking
Spread orzo in even layer and toast 1 minute
Increase heat to high, stir in herbs and broth
Bring to boil, then simmer 8-10 minutes until orzo is al dente
Stir in spinach and half and half/coconut milk, simmer until thickened
