Ingredients
2 boneless, skinless chicken thighs
2 tablespoons olive oil (or avocado oil)

1 cup Caesar dressing (homemade or store-bought, no anchovies if needed)
1 head romaine lettuce
4 large whole wheat tortillas
1/2 cup Parmesan croutons (homemade or store-bought)

Instructions
Combine chicken thighs with 2 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon garlic powder, 1 teaspoon dried oregano, and season with salt and pepper. Let marinate for 30 minutes.
Preheat indoor grill or grill pan to medium-high heat. Cook chicken 7-8 minutes per side, rotating for even charring.
Lightly toast tortillas on both sides in a dry skillet or under the broiler until crisp but pliable.
