Ingredients
Olive Oil (1 Tbsp)
Lean Ground Beef (1 lb/16 oz)
Yellow Onion (1, diced)
Processed Cheese (2 lbs/32 oz, cheddar or Velveeta)
Rotel Diced Tomatoes and Green Chiles (2 (10 oz) cans)
Garlic Powder (1 tsp)
Cumin (1 tsp)
Salt and black pepper (to taste)
Crispy Topping:
All-Purpose Flour (1/2 cup)
Ground Cheddar Cheese (1/2 cup)
Shredded Parmesan or Processed Cheese (1/2 cup)
Butter (2 Tbsp, melted)
Instructions
Heat oil in a large skillet over medium heat
Add ground beef and onion; cook until beef is browned and onion is tender
Stir in Rotel, garlic powder, cumin, salt, and pepper
Simmer 5 minutes, then gently fold in softened processed cheese until fully melted and smooth
In a separate bowl, mix flour, cheddar, and Parmesan for the crispy topping
Blend in melted butter until crumbly
Spread the cheese mixture into a 9x13inch baking dish
Sprinkle the crispy topping evenly over the dip
Bake at 350°F (175°C) for 15-20 minutes, until the topping is golden and bubbly
Notes
Use a nonstick skillet to reduce oil
Replace beef with ground turkey or plant-based meat for a lighter version
Add 1-2 tsp chipotle powder or chopped cilantro for extra flavor
