Ingredients
1 cup creamy almond butter
2 large eggs
1/2 cup coconut sugar
1/4 cup pure maple syrup
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
1 tablespoon coconut flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dairy-free chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
In a large mixing bowl, whisk together the almond butter, eggs, coconut sugar, maple syrup, melted coconut oil, and vanilla extract until well combined and smooth.
Add the coconut flour, baking soda, and salt to the wet mixture and stir until fully incorporated.
Fold in the dairy-free chocolate chips.
Pour the batter into the prepared baking pan, spreading it evenly.
Bake for 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Allow the blondies to cool completely in the pan before cutting them into 16 squares.
Notes
Ensure your almond butter is the drippy variety for the best texture. If stored in an airtight container at room temperature, these blondies stay fresh for up to 3 days, or you can refrigerate them for up to a week to maintain freshness.
