Ingredients
1 cup Matzo meal (finely processed)
1 cup + 5 Tbsp Vegetable shortening (divided)
1/4 cup Granulated sugar
1/3 cup + 2 tsp Honey (divided)
1/4 cup Water
1 1/2 cups Chopped walnuts
1 cup Dried apricots (chopped)
1 Tbsp Freshly squeezed orange juice
1 tsp Vanilla extract
1/2 tsp Freshly grated orange peel
Instructions
Coat a 9-inch tart pan with a removable bottom with non-stick spray.
Process matzo meal in a food processor until fine.
Add 5 tablespoons of shortening, 1/4 cup of water, and 2 teaspoons of honey to the processor and pulse until a dough ball forms.
Roll the dough into a 10-inch circle on a surface sprinkled with extra matzo meal.
Press the dough into the prepared pan and refrigerate briefly to firm up.
In a bowl, combine the remaining 1 cup of shortening, 1/3 cup of honey, walnuts, apricots, orange juice, vanilla, and orange peel to create the filling.
Spread the filling evenly into the chilled crust.
Bake at 350°F (180°C) for 20 minutes or until the edges are golden brown.
Notes
