Description

Celebrate the essence of autumn with these incredibly moist and tender dairy-free pumpkin spice muffins. Using high-quality pumpkin puree and a perfect harmony of aromatic spices, this recipe yields a rich, caramelized flavor profile. Ideal for meal prep or a cozy weekend treat, these muffins maintain their soft texture for days, proving that dietary restrictions never have to compromise taste or quality. Perfect for sharing with the whole family during chilly mornings.

Ingredients

Scale

2 cups all-purpose flour
1.5 tsp baking powder
0.75 tsp baking soda
0.75 tsp sea salt
2 tsp pumpkin spice
0.75 cup granulated sugar
0.75 cup packed brown sugar
8 tbsp vegan butter, melted
3 large eggs, room temperature
2 tsp pure vanilla extract
15 oz pumpkin puree

Instructions

Preheat your oven to 375°F (190°C) and line your muffin pans with paper liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice until well combined.
In a large bowl, whisk the granulated sugar, brown sugar, and melted vegan butter until smooth.
Add the eggs and vanilla extract to the butter mixture, whisking until well incorporated.
Stir in the pumpkin puree until smooth.
Slowly fold the dry ingredients into the wet ingredients until just combined, being careful not to over-mix.
Divide the batter evenly into the prepared muffin liners.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure your baking powder and soda are fresh for the best rise. Spoon the flour into the measuring cup and level it off rather than scooping directly to ensure an accurate measurement. If you prefer, you can reduce the sea salt to 0.5 tsp.
