Ingredients
2 ½ cups All-purpose flour (or gluten-free flour blend)
1 ½ cups Granulated sugar
½ cup Brown sugar, packed
2 teaspoons Baking powder
1 teaspoon Baking soda
½ teaspoon Salt
2 teaspoons Ground cinnamon
1 teaspoon Ground nutmeg
½ teaspoon Ground ginger
15 ounces Canned pumpkin puree (not pumpkin pie filling)
3 Large eggs, room temperature
½ cup Vegetable oil
2 teaspoons Vanilla extract
8 ounces Cream cheese, softened
½ cup (1 stick) Unsalted butter, softened
3–4 cups Powdered sugar, sifted
Instructions
Whisk the dry components (all-purpose flour or gluten-free alternative, leavening agents, and warming spices) together in a large bowl until thoroughly combined.
In a separate bowl, combine the wet components (canned pumpkin puree, large eggs, and vegetable oil).
Gradually add the wet mixture to the dry mixture. Mix until just combined, being careful not to overmix the batter.
Divide the batter evenly among your prepared cake pans.
Bake until a wooden skewer inserted into the center comes out clean. Allow the layers to cool completely on a wire rack before frosting.
For the frosting, combine the softened cream cheese and softened unsalted butter in a large mixing bowl. Beat them together on medium speed until light and fluffy (2-3 minutes), scraping down the sides frequently.
Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until just combined after each addition.
Incorporate a touch of vanilla extract.
Beat one last time on medium-high speed for a minute to create an airy and spreadable frosting.
Place one cooled cake layer on your serving plate or stand. Spread a generous, even coating of the cream cheese frosting over the top surface.
Carefully position the second cake layer directly on top of the frosted first layer. Repeat the process, adding another uniform coating of frosting.
Continue this layering until all cake sections are used, ensuring each section is level for a stable structure.
Apply the remaining frosting to the sides and top of the entire cake. Use an offset spatula or knife to create smooth, elegant swirls or a textured finish.
