Description

Ingredients

1 2/3 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter (softened) or vegan alternative
1 cup granulated sugar
1 large egg (room temperature)
2 tsp vanilla extract (gluten-free if needed)
1 cup milk or oat milk substitute
24 oz candy melts (gluten-free) or white chocolate
Sprinkles or edible glitter for coating


Instructions

Preheat oven to 350°F (177°C). Grease 9-inch springform pan
Whisk together flour, baking powder, baking soda, and salt
Using stand mixer, cream softened butter and sugar until light/fluffy
Add egg and vanilla; beat on high until fully combined
Alternately add dry ingredients and milk to wet ingredients
Pour batter into prepared pan and bake for 35 minutes
Remove cake and let cool completely in pan
Break cooled cake into small crumbles in large bowl
Melt candy melts in microwave-safe bowl (if using chocolate, melt in double boiler)
Using lollipop molds or wooden sticks, form 1-inch balls and dip in melted coating while sprinkles are still wet
Place on parchment paper and chill in fridge for 2 hours until firm

Notes

For halal option use dairy-free candy melts
Chilled cake pops can be stored in airtight container for 3 days
Hold candy melts in parchment paper until use by placing paper underneath while setting
