Description
A full-flavored one-pot Italian sausage dish with bell peppers, onions, garlic, greens, and crushed tomatoes. Perfect for gatherings, customizable with spice levels and vegetables. Easy to prepare and reheats well.
Ingredients
8 Italian sausage links (2½ lb/1.1 kg) (halal-approved beef/poultry)
¼ cup (60 ml) extra-virgin olive oil
3 red bell peppers, sliced
2 medium red onions, sliced
5 cloves garlic, sliced
2 cups (200 g) broccolini, trimmed and cut into 1″ pieces
4 oz (115 g) spinach, whole bunch
Crushed red pepper flakes, to taste
28 oz (794 g) crushed tomatoes
Instructions
Heat olive oil in a Dutch oven over medium. Cook onions and peppers 5 minutes until softened. Add garlic and red pepper flakes, sauté 2 minutes.
Plug sausage links, cook 8-10 minutes until browned. Add herbs (optional) like basil or oregano.
Add crushed tomatoes to the pot, stir to coat. Toss in broccolini and spinach, simmer 8-10 minutes until greens are wilted and veggies are tender.
Season with salt and pepper, serve family-style.
Notes
Substitute Italian sausage with halal-approved beef or plant-based sausage for dietary restrictions.
Optional: Add cherry tomatoes or zucchini for extra veggie variety.
Store leftovers in air-tight containers, refrigerates up to 4 days.
