Description

Ingredients

1 pound shrimp, peeled and deveined
1 tablespoon butter or ghee
1 tablespoon olive oil
1/4 cup mayonnaise or Greek yogurt
2 tablespoons lemon juice or lime juice
1 tablespoon parsley, chopped
1 tablespoon green onions (or shallots)
1 teaspoon Dijon mustard or yellow mustard
Salt and pepper to taste
4 New England-style hot dog buns
4 lettuce leaves (or shredded cabbage)


Instructions

Rinse and dry shrimp.
Heat butter/oil in a pan; cook shrimp 2-3 minutes until pink.
Mix mayo/yogurt, lemon juice, parsley, green onions, mustard, salt, and pepper.
Toast buns briefly.
Assemble rolls with lettuce and shrimp mixture.
