Ingredients
1¾ cups (210g) all-purpose flour
1 tsp baking powder
¼ tsp baking soda
¾ tsp salt
1 cup (220g) light brown sugar
½ cup (113g) unsalted butter, melted
1 large egg, room temperature
2 tsp vanilla extract
1 cup (180g) mix-ins (chocolate chips, chopped nuts)
Instructions
Preheat oven to 350°F (180°C)
Line an 8-inch square baking pan with parchment paper
Whisk flour, baking powder, baking soda, and salt in a bowl
In another bowl, mix brown sugar and melted butter until combined
Stir in egg and vanilla extract until smooth
Gradually add dry ingredients to wet ingredients
Fold in mix-ins
Pour batter into prepared pan
Bake for 30–35 minutes or until a toothpick inserted in the center comes out with few crumbs
Notes
Use gluten-free flour for a gluten-free version
Substitute coconut oil for dairy-free blondies
Omit vanilla extract or use non-alcoholic vanilla
Let cool completely before cutting for cleaner bars
