Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
1/4 cup granulated sugar
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp salt
Instructions
Preheat your oven to 325 degrees Fahrenheit.
Line a 9 x 9-inch square baking pan with parchment paper.
Beat the softened butter, powdered sugar, and granulated sugar together for 2 minutes until pale and fluffy.
Mix the vanilla extract into the butter mixture until fully combined.
Stir the flour and salt into the wet ingredients until a soft dough forms; do not overmix.
Press the dough evenly into the prepared square pan.
Prick the surface of the dough all over with a fork.
Chill the pan in the refrigerator for 20 minutes.
Bake for 35 to 40 minutes until the edges are lightly golden.
Remove from oven and let cool completely before cutting into 24 bars.
Notes
Ensure butter is at room temperature for the best texture. Spoon and level the flour to avoid packing it too tightly, which can make the cookies tough. Store in an airtight container at room temperature for up to a week.
