Ingredients
1 Tablespoon unsalted butter, for greasing
6–7 medium ripe but firm peaches (about 2 lbs), sliced
1/2 cup granulated sugar (adjust to peach sweetness)
1 teaspoon ground cinnamon
1 box (15.25 oz) yellow cake mix
1/2 cup unsalted butter, melted
Instructions
Preheat oven to 350°F (175°C).
Grease a 9×13 inch baking dish with 1 tablespoon of butter.
Spread the sliced peaches evenly in the bottom of the prepared baking dish.
Sprinkle the sugar and cinnamon over the peaches.
Evenly sprinkle the dry yellow cake mix over the peach layer. Do not mix.
Drizzle the melted butter evenly over the cake mix, ensuring it covers as much of the dry mix as possible.
Bake for 40-50 minutes, or until the top is golden brown and the filling is bubbly.
Let cool slightly before serving.
Notes
For variations: Canned peaches (drained) or frozen peaches (do not thaw) can be used. You can also add a pinch of nutmeg or ginger with the cinnamon. Serve warm with vanilla ice cream or whipped cream.
