Ingredients

Granulated sugar 1 cup (200g) or coconut sugar

Buttermilk ½ cup (118ml) or Greek yogurt
All-purpose flour 1 ⅔ cups (210g) or gluten-free blend
Baking powder 1 tsp
Ground cinnamon 1 tbsp
Salt ½ tsp
Diced peaches 1 ¼ cups (175g) fresh or unsweetened canned
Coarse sugar optional for sprinkling
Instructions
Line 12-cup muffin tin with paper liners
Preheat oven to 375°F (190°C)
Melt ½ cup butter in saucepan over medium-low heat
Increase to medium, stir until golden brown flecks appear
Remove from heat, transfer to bowl, let cool completely
Add 1 cup sugar, 1 egg, and ¾ tsp non-alcoholic vanilla
Whisk until fully combined (~3 minutes)
Stir in ½ cup buttermilk substitute
In separate bowl, whisk flour, baking powder, cinnamon
Gradually add dry mixture to wet ingredients
Gently fold until halfway combined (~15 strokes)
Stir in diced peaches
Divide batter into prepared tin
Sprinkle with coarse sugar
Bake 20 minutes or until golden
