Description

A versatile and flavorful Vietnamese dipping sauce, perfect for spring rolls, grilled meats, or as a dressing. This recipe highlights the umami depth of 3 Crabs Fish Sauce.


Ingredients

1/4 cup 3 Crabs Fish Sauce
1/4 cup granulated sugar
1/2 cup warm water
2 tablespoons fresh lime juice (from about 12 limes)
12 cloves garlic, minced
12 small red chilies (like bird’s eye), thinly sliced (optional, for heat)
1 tablespoon shredded carrots (optional, for garnish and slight sweetness)


Instructions

In a medium bowl, combine the warm water and sugar. Stir until the sugar is completely dissolved.
Add the 3 Crabs Fish Sauce and fresh lime juice to the sugar mixture. Stir well to combine.
Stir in the minced garlic and sliced chilies (if using).
Taste and adjust seasoning as needed. You might want more lime for tang, more sugar for sweetness, or more fish sauce for saltiness and umami.
If desired, stir in the shredded carrots for color and texture.
Let the sauce sit for at least 15-30 minutes before serving to allow the flavors to meld. This sauce can be made ahead and stored in the refrigerator.
