Ingredients
9-inch deep-dish pie crust, pre-baked or homemade
1 tablespoon olive oil (or sunflower oil)
1 small onion, finely chopped
1 small green bell pepper, diced
2 cloves garlic, minced
1 teaspoon Old Bay seasoning
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional)
8 ounces peeled, cooked shrimp, medium
1 cup heavy cream
½ cup whole milk
2 large eggs
1 cup shredded cheddar cheese
Pinch of salt and black pepper
Instructions
Preheat oven to 375°F (190°C). Sauté onion, bell pepper, and garlic in oil until tender. Add Old Bay, smoked paprika, cayenne, and shrimp; cook 2-3 minutes. Remove from heat and let cool slightly. In a bowl, whisk cream, milk, eggs, cheese, salt, and pepper. Pour into the crust, then add shrimp mixture and vegetables on top. Bake 25 minutes or until center is set and golden. Let rest 10 minutes before slicing.
Notes
