40g Natural Cocoa Powder, sifted
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1 Large Egg, room temperature
150g Granulated Sugar
100g Brown Sugar
120ml Neutral Oil
120ml Milk
370g Dark Chocolate (divided for mousse and ganache)
580g Whipping Cream (high fat content)
10 Fresh Strawberries, halved


Instructions

Preheat your oven to 350°F and prepare a 9-inch springform pan.
In a small bowl, whisk together the gluten-free flour, cocoa powder, baking powder, baking soda, and salt.
In a separate large bowl, whisk the egg with granulated and brown sugar until well-combined.
Add the oil to the egg mixture and whisk until smooth.
Alternately add the dry flour mixture and the milk to the wet ingredients, mixing until just combined.
Pour the batter into the prepared pan and bake for 30-32 minutes.
Allow the cake base to cool completely, then level the top with a serrated knife and reassemble the springform pan.
Melt the first portion of dark chocolate with hot cream to create the ganache base.
Whip the remaining cream to soft peaks.
Fold the chocolate ganache into the whipped cream carefully to maintain volume.
Pour the mousse over the cake base, smooth the top, and chill until set.
Arrange halved strawberries on top before serving.

Notes

Ensure the whipping cream is very cold before whipping to achieve the best volume.
Use a 1:1 gluten-free flour blend that already contains xanthan gum for the best structural integrity.
