Description

80g unsalted butter, softened
120g full-fat cream cheese, softened
50ml double cream
250g gluten-free plain flour blend
0.5 tsp fine grain salt
220g good-quality set honey
3 medium free-range eggs
120g golden caster sugar
2 tsp cornflour


Instructions

Whizz the butter, cream cheese, and cream in a food processor until the mixture is smooth.
Pulse in the gluten-free flour and salt until the pastry begins to come together.
Knead the dough on a lightly floured surface for 30 seconds before forming into a flat disc.
Wrap the pastry tightly and chill in the refrigerator for at least one hour.
Preheat oven to 200°C fan.
Roll the pastry out to 5mm thickness and carefully line a 23cm fluted tart tin.
Prick the base with a fork, line with parchment paper, and fill with baking beans.
Bake for 15 minutes, then remove beans and paper and bake for another 5 minutes to set the base.
Lower oven to 160°C. Whisk together honey, eggs, sugar, and cornflour for the filling.
Pour the custard into the pastry case and bake for 50-55 minutes until the center has a slight wobble.
Allow to cool completely before serving to ensure the custard sets perfectly.

Notes

Ensure all pastry ingredients are at room temperature to achieve a smooth dough. Do not overmix after adding the gluten-free flour to keep the crust tender. The tart is best served at room temperature once fully set.
