Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Blot the pumpkin puree with paper towels to remove excess moisture for a stable dough.
In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and ginger.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until fully incorporated.
Slowly fold the dry ingredients into the wet mixture, alternating with the blotted pumpkin puree until a smooth dough forms.

Notes

Ensure your gluten-free flour blend contains xanthan gum for the best structure. If it does not, add 1 tsp of xanthan gum. Store in an airtight container at room temperature for up to 3 days or freeze for up to a month.
