Ingredients
1 cup GF 1:1 Flour blend with xanthan gum
1 cup Quick Cooking certified gluten-free oats
2 tsp Pumpkin Spice
0.5 tsp Baking Soda
0.25 tsp Salt
0.5 cup Pumpkin Puree (not pie filling)
0.5 cup Coconut Oil, melted and cooled
0.5 cup Coconut Sugar
2 large Eggs, whisked
1 tsp Pure Vanilla Extract
0.5 cup Chocolate Chips
Instructions
Preheat your oven to 350F.
Grease an 8×8 inch baking pan or line it with parchment paper.
In a medium bowl, whisk together the flour, oats, pumpkin spice, baking soda, and salt.
In a separate large bowl, beat the pumpkin puree, melted coconut oil, sugar, eggs, and vanilla until well combined.
Add the dry ingredients to the wet mixture and stir until fully incorporated.
Fold in the chocolate chips.
Spread the batter evenly into the prepared baking pan.
Bake for 18 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool completely before slicing into 9 squares.

Ensure you are using pure pumpkin puree and not pre-mixed pumpkin pie filling. For a dairy-free version, use dairy-free chocolate chips. Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
