Ingredients
8 oz goat cheese, fresh log
4 oz cream cheese, softened at room temperature
4 oz prosciutto, finely chopped
1 tsp orange zest
1/2 cup pistachios, roasted
2 slices garnish prosciutto, cross-cut into matchsticks
1/2 cup olives (Castelvetrano preferred)
1 egg yolk
Instructions
Combine softened goat cheese and cream cheese in a mixing bowl.
Add chopped prosciutto and orange zest, mixing in two additions.
Gradually fold in chopped pistachios until just combined.
Using a 2 oz ice cream scooper, portion the mixture onto a parchment-lined baking sheet.
Roll each portion between paper towels and your palms to create a smooth, round shape.
Chill for 30 minutes until firm.
Crack an egg yolk over each bonbon to prevent sticking.
Top each with a prosciutto matchstick as a garnish.
Arrange olives on a large rectangular platter and place bonbons alongside for serving.
