Description
A tropical gluten-free dessert or side, juxtaposing smoky sweetness and charred aroma. Caramelized cinnamon-sugar glaze enhances the pineapple’s natural juiciness, served with optional shredded coconut and lime for a fresh kick.
Ingredients
Fresh Pineapple, 1 whole (peeled and cut into 1.5-inch spears)
Brown Sugar, 1/4 cup
Ground Cinnamon, 1 tsp (or 1/2 tsp nutmeg)
Shredded Coconut, 1/4 cup (optional)
Lime Juice, 1 tbsp
Chili Powder, 1/4 tsp (optional)
Instructions
Peel pineapple, keeping the top and bottom attached for stability during cutting
Cut vertical slices into 1.5-inch spears using a sharp knife
In a bowl, whisk brown sugar, cinnamon, and chili powder until evenly combined
Spread the sugar mixture evenly over pineapple spears with a spoon
Preheat grill to 350–450°F and lightly oil the grates
Grill spears cut-side down for 4–5 minutes per side until golden-brown and charred
Sprinkle shredded coconut (if using) and drizzle lime juice over grilled spears before serving
Notes
Choose pineapple that feels slightly soft when squeezed, like ripe lips
Brush the rimmed sides of spears with extra sugar mix halfway through grilling for enhanced caramelization
Use indirect heat on a cooler grill zone to prevent burning if needed
Replace brown sugar with coconut sugar for a lower-glycemic option
Avoid grilling uncut pineapple to prevent juice trapping and uneven burning
