Ingredients
180 g self-raising flour
180 g salted butter, room temperature
180 g soft brown sugar, packed
3 large eggs, room temperature
100 ml whole milk
7.5 g black cocoa powder
15 g pumpkin powder
2 tsp pumpkin spice mix
1/3 tsp baking powder
1/8 tsp salt
1/2 tsp pure vanilla extract
Orange and black food coloring gel (as needed)
Instructions
Preheat your oven to 175°C and grease a standard cake tin.
Cream together the room temperature butter and soft brown sugar until light and fluffy.
Gradually add the eggs one by one, beating well after each addition.
Sift the self-raising flour, baking powder, and salt together, then fold into the wet mixture, alternating with the milk.
Divide the batter into two separate bowls.
In the first bowl, fold in the pumpkin powder and pumpkin spice mix.
In the second bowl, fold in the black cocoa powder and a small amount of black food coloring gel for depth.
Add a few drops of orange gel to the pumpkin batter to enhance the color.
Dollop spoonfuls of the two batters into the prepared tin, alternating colors.
Use a skewer to gently swirl the batters together, creating a marble effect, being careful not to over-mix.
Bake for 45 minutes or until a skewer inserted into the center comes out clean.
Allow to cool in the pan before serving.

Ensure all cold ingredients are brought to room temperature before mixing to achieve the best crumb structure. For the best marbled effect, do not over-swirl the batter as this will muddy the colors. Store in an airtight container at room temperature for up to 3 days.
