Perfect for busy mornings or cozy afternoons, this loaf features the warm, inviting notes of cinnamon, ginger, nutmeg, and cloves, making it an instant family favorite.

Ingredients

Scale

1 3/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 cup vegetable oil
2 large eggs, room temperature
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup pumpkin puree
1 cup shredded apple, peeled
3/4 cup shredded carrot, peeled
2 tablespoons milk
1 cup chopped walnuts

Instructions

Preheat your oven to 350°F (177°C) and grease a standard 9×5-inch loaf pan thoroughly.
Whisk the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a large mixing bowl until fully combined.
Mix the oil, eggs, granulated sugar, brown sugar, pumpkin, shredded apple, shredded carrot, and milk in a separate medium bowl.
Pour the wet ingredients into the dry mixture and whisk gently until just combined.
Fold in the chopped walnuts manually using a rubber spatula.
Spread the batter evenly into the prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store the bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. You can substitute the vegetable oil with melted coconut oil if preferred. Ensure apples and carrots are finely shredded for the best texture.
