Description
A moist, whole-grain banana bread made with coconut oil, honey, and ripe bananas. Lightly spiced with cinnamon, it’s a versatile, nutrient-rich treat perfect for breakfast or snacks.
Ingredients
Melted coconut oil or vegetable oil, ⅓ cup (75g)
Honey or maple syrup, ½ cup (168g or 155g)
Large eggs, 2
Mashed ripe bananas, 1 cup (225g) from ~2½ medium bananas
Non-dairy milk, ¼ cup (56g)
Baking soda, 1 tsp
Vanilla extract, 1 tsp
Salt, ½ tsp
Ground cinnamon, ½ tsp plus more for topping
Instructions
Preheat oven to 350°F (180°C)
Line a 9×5-inch loaf pan with parchment paper
In a large bowl, whisk eggs until frothy
Add melted oil, honey, and mashed bananas; mix until smooth
Stir in non-dairy milk, vanilla extract, and cinnamon
In a separate bowl, combine all dry ingredients (starting with baking soda and salt)
Gradually add dry ingredients to wet mixture; fold gently to avoid overmixing
Pour batter into prepared loaf pan
Sprinkle remaining cinnamon on top
Bake for 55–60 minutes, or until golden and skewer-clean
Let cool completely before slicing
Notes
Use overripe bananas for maximum sweetness
Egg substitute: ¼ cup mashed ripe banana or unsweetened applesauce
Non-dairy milk can be replaced with water (add ½ tsp apple cider vinegar for richness)
Add ½ cup raisins or chopped walnuts/nuts for extra flavor
Baking powder is not recommended here
Reduce salt to ¼ tsp for lower sodium
