Description
A moist, naturally sweet banana bread made with whole wheat flour and natural sweeteners. Quick, easy, and customizable with mix-ins like nuts or seeds.
Ingredients
Melted coconut or vegetable oil, ⅓ cup (75g)
Honey or maple syrup, ½ cup (168g / 柿5g)
Eggs, 2
Mashed ripe bananas, 1 cup (225g)
Milk or water, ¼ cup (56g)
Baking soda, 1 tsp
Vanilla extract, 1 tsp
Salt, ½ tsp
Ground cinnamon, ½ tsp (plus for topping)
White whole wheat or whole wheat flour, 1 ¾ cups (220g)
Instructions
Preheat oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
In a large bowl, mash bananas thoroughly. Stir in oil, honey/maple syrup, eggs, milk/water, vanilla, baking soda, salt, and cinnamon (½ tsp).
Add flour and ½ tsp cinnamon; mix until just combined. Avoid overmixing.
Pour batter into prepared pan. Top with additional cinnamon.
Bake 55-60 minutes until a toothpick inserted comes out clean.
Let cool for 10 minutes before slicing.
Notes
For added flavor, stir in nuts, chocolate chips, or dried fruit.
Store in an airtight container at room temperature for up to 3 days.
Coconut oil enhances banana flavor if whisked briefly into batter.
