Description

2.5 cups old-fashioned oats
1 cup creamy almond butter
1/4 cup pure maple syrup
1/4 cup unsweetened applesauce
2 cups mixed berries
1.5 tbsp cornstarch
1/4 cup coconut oil, melted
1 tbsp water


Instructions

Preheat oven to 350°F (177°C) and line an 8-inch square pan with parchment paper.
Whisk cornstarch and water in a small bowl until dissolved.
In a saucepan over medium heat, combine berries, cornstarch mixture, and maple syrup.
Stir constantly while smashing berries until the mixture simmers and thickens for 2 minutes.
Remove filling from heat and let it cool completely.
In a food processor, pulse oats to a coarse flour consistency.
In a large bowl, combine pulsed oats, almond butter, applesauce, and melted coconut oil to form a dough.
Press two-thirds of the oat mixture into the prepared pan.
Spread the cooled berry filling over the base layer.
Crumble the remaining oat mixture over the top to form the streusel layer.
Bake for 30 minutes until golden brown.
Allow bars to cool completely in the pan before slicing into 9 squares.

Notes

Ensure the berry filling is completely cool before assembling to prevent the bars from becoming mushy. You can swap the berries for any seasonal fruit like diced peaches or blueberries. Store in an airtight container in the refrigerator for up to 5 days.
