Ingredients
380g unsalted butter (softened)
100g light brown soft sugar
250g caster sugar
4 medium eggs
350g plain flour
60g high-quality Dutch-processed cocoa powder
0.5 tsp baking powder
1 pinch salt
150ml semi-skimmed milk
Instructions
Preheat your oven to 180°C.
Grease and line a 9 inch by 12 inch traybake tin with high-quality greaseproof paper.
In a large mixing bowl, cream the butter, brown sugar, and caster sugar together until light and fluffy.
Add the eggs one at a time, mixing thoroughly between each addition.
Sieve the flour, cocoa powder, baking powder, and salt together to ensure a smooth, lump-free batter.
Gradually fold the dry ingredients into the butter and egg mixture.
Pour in the milk and fold gently until the batter reaches a smooth, spreadable consistency.
Spread the batter evenly into the prepared tin.
Bake for 40 minutes or until a skewer inserted into the center comes out clean.
Allow to cool in the tin before slicing into uniform pieces.
Notes
You may substitute the plain flour with a high-quality gluten-free flour blend if preferred. Ensure all ingredients are at room temperature before mixing to achieve the best crumb structure. Store in an airtight container at room temperature for up to three days.
