Ingredients
4 boneless skinless chicken thighs or breasts
1 cup barbecue sauce (honey-based or molasses-style)
2 tbsp honey
2 tbsp olive oil (2 tbsp allocated)
1 tsp garlic powder (or 4 tsp fresh minced garlic)
1.5 lb baby potatoes (1 cup cooked per serving)
1 tsp Italian seasoning
2 tbsp chopped parsley (or cilantro for a Middle Eastern twist)
Instructions
Preheat oven to 425°F (220°C)
Halve potatoes for even roasting
Add 2 tbsp olive oil, 4 tsp minced garlic, 1 tsp Italian seasoning, salt and pepper
Toss until mixture forms golden glaze
Spread prepared potatoes on parchment-lined baking sheet
Brush with BBQ sauce and honey in a small bowl
Place chicken in single layer on top of potatoes
Roast for 40-50 minutes (45 if thighs) flipping potatoes halfway
