Description

A hearty Tex-Mex casserole with smoky beef, vibrant veggies, and golden biscuits topped with a creamy cheese melt. Perfect for feeding a crowd with minimal effort.


Ingredients

Jumbo biscuits, 16 oz
Lean ground beef, 2 lbs
Taco seasoning, 1 oz
Water, 1 cup
Diced sweet onion, 1 cup
Diced green pepper, 1 cup
Diced red pepper, 1 cup
Tomatoes with chiles, 10.5 oz can
Sour cream, 1 cup
Mayonnaise, 1/2 cup
Shredded cheddar cheese, 2 cups


Instructions

Preheat oven to 375°F (190°C)
Cook ground beef in a skillet, breaking into small pieces. Drain fat
Add taco seasoning, water, onion, green pepper, and red pepper to the cooked beef. Simmer for 10 minutes
In a greased 9×13″ baking dish, spread the beef mixture evenly
Top with biscuits, spacing slightly apart
Mix sour cream, mayonnaise, and half the cheese. Spread over biscuits
Sprinkle remaining cheese on top
Bake for 25–30 minutes until golden and bubbly
Let cool slightly before serving

Notes

Use beef broth instead of water for deeper flavor
Cut biscuits into small rectangles if using store-bought
Adjust spice level by adding more peppers or seasoning
Store leftovers refrigerated for up to 3 days
