Ingredients
2 whole apples, grated with skin on
250g almond flour
12g baking powder
4g baking soda
2g cinnamon (Ceylon)
2g nutmeg
2g sea salt
100g flaked almonds
120g light olive oil or avocado oil
4 large eggs
225g keto-friendly erythritol brown sugar substitute
100g unsweetened apple sauce
Instructions
Preheat your oven to 170°C (340°F).
Butter a 20-22cm springform cake tin and line the base with parchment paper.
In a large bowl, whisk the eggs and keto-friendly sweetener until well combined.
Gradually whisk in the oil and unsweetened applesauce.
In a separate bowl, combine the almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Fold the dry ingredients into the wet mixture until smooth.
Gently fold in the grated apples.
Pour the batter into the prepared tin and smooth the top.
Sprinkle the flaked almonds evenly over the top of the cake.
Bake for 50 minutes or until a toothpick comes out clean.
Allow to cool in the pan before releasing the springform ring.
