Ingredients
1 cup natural smooth peanut butter
4 tbsp unsalted butter
1/4 cup brown sugar substitute (erythritol or monk fruit)
1 cup powdered sugar substitute
16 oz sugar-free dark chocolate chips
Instructions
Line three 12-hole mini muffin tins with paper patties.
Combine peanut butter, butter, and brown sugar substitute in a small saucepan over medium heat.
Stir constantly until the butter melts and the mixture begins to bubble.
Remove from heat and whisk in the powdered sugar substitute 1/4 cup at a time until smooth.
Refrigerate the filling until cool enough to handle and roll into small balls.
Melt the sugar-free chocolate chips in the microwave using short bursts, stirring until smooth.
Spoon a small amount of chocolate into the bottom of each mini muffin liner.
Place a flattened peanut butter ball on top of the chocolate layer.
Cover with the remaining melted chocolate and refrigerate until set.
Notes
Ensure the peanut butter is a natural variety without added oils to maintain the correct consistency. Store finished cups in the refrigerator for the best texture.
