1/2 cup + 23 T walnuts
1/2 cup pitted dates
1/2 cup canned 100% pure pumpkin puree
2 T sugar-free keto maple syrup
1/2 cup rolled oats
1/2 cup pumpkin seeds
1/2 tsp pumpkin pie spice
1 big pinch kosher salt
1/4 cup unsweetened shredded coconut


Instructions

Line a rimmed 1/4 sheet pan with wax paper to ensure the balls do not stick.
Place 1/2 cup of walnuts and pitted dates in a food processor.
Pulse the mixture until it becomes a fine, sticky crumble.
Add the pumpkin puree, keto syrup, rolled oats, pumpkin seeds, pumpkin pie spice, and salt.
Pulse again until a thick, uniform dough forms.
Scoop small portions of the dough and roll them into 12-14 balls with your hands.
