2 lbs ground beef, 90% lean or ground turkey
3 tablespoons low-sodium soy sauce
1 tablespoon toasted sesame oil
1 tablespoon dark brown sugar
¼ teaspoon red pepper flakes (adjust to taste)
1 tablespoon + ¼ cup Asian chili sauce (e.g., Sriracha or sambal oelek)
¼ teaspoon ground fresh ginger or ½ teaspoon dried ginger
3 cloves garlic, minced or 1 teaspoon powdered garlic
½ cup panko bread crumbs (or gluten-free breadcrumbs or almond flour)
2 cups cooked rice, to serve


Instructions

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, combine ground beef, soy sauce, sesame oil, brown sugar, red pepper flakes, chili sauce, ginger, and garlic. Mix until well combined.
Add panko breadcrumbs and mix gently until the mixture holds its shape.
Shape the mixture into 8 meatballs and place them on the prepared baking sheet.
