2 cups (256 g) All-Purpose Flour
1/4 tsp Salt
4 Large Eggs, whisked
1 1/2 cups Granulated Sugar
2/3 cup Fresh Lemon Juice
1 Tbsp Lemon Zest
Instructions
Preheat oven to 350°F and line a 9×13-inch baking pan with parchment paper.
Mix softened butter, powdered sugar, flour, and salt in a bowl until crumbly.
Press the mixture firmly into the bottom of the pan to form an even layer.
Bake for 18-20 minutes until the edges are light golden brown.
Whisk eggs, granulated sugar, lemon juice, and zest together until smooth while the crust bakes.
Pour the lemon mixture over the hot crust once removed from the oven.
Reduce oven temperature to 325°F and bake for another 20-25 minutes until the custard is set.
Allow to cool completely before cutting into 16 bars.
Notes
Ensure lemon juice is freshly squeezed for the best flavor. Cool bars completely in the refrigerator for at least two hours for cleaner slices. Dust with extra powdered sugar before serving.
