These tender, melt-in-your-mouth lemon blondies deliver a zesty, bright flavor without being overly sweet. With a simple one-step batter and a quick lemon glaze, they are a perfect fresh and light treat that’s easy to customize and perfect for any occasion.
Ingredients
½ cup (113g) unsalted butter, melted
½ cup (100g) granulated sugar
½ cup (60g) confectioners’ sugar
¼ teaspoon kosher salt
2 large eggs
1 teaspoon vanilla extract
1 tablespoon (15mL) lemon juice (for batter)
2 tablespoons lemon zest (for batter)
1 ¼ cups (157g) all-purpose flour
30mL lemon juice (for icing)
1 tablespoon lemon zest (for icing)
Instructions
Preheat oven to 350°F. Line an 8×8-inch pan with double parchment paper to prevent sticking.
In a medium bowl, whisk melted butter until smooth.
Gradually add granulated sugar while whisking to dissolve sugar crystals.
Add confectioners’ sugar and salt. Whisk for 1 minute until a thick homogeneous mixture forms.
Incorporate eggs one at a time, whisking constantly after each addition to ensure even emulsification.
Add vanilla extract and 1 tablespoon of lemon juice, then fold in 2 tablespoons of lemon zest.
Gently stir in flour until just combined, taking care not to overmix.
Spread the batter evenly into the prepared pan.
Bake for 25–30 minutes, or until the edges are golden and a toothpick comes out clean. Adjust baking time for desired texture (25 min for chewier, 30 min for crispier).
While the blondies cool, whisk together 30mL of lemon juice and 1 tablespoon of lemon zest for the icing.
Once the blondies are cool, spread the柠檬 icing over the top and allow it to set before cutting into squares.
Notes
Melt butter first for improved texture; coconut oil is a good dairy-free substitute.
Use room temperature eggs for best emulsification.
For vegan version, use flax eggs instead of regular eggs and substitute butter with melted coconut oil.
Adjust the glaze consistency by adding more lemon juice or confectioners’ sugar as needed.
Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
