Ingredients
4 large Russet Potatoes, diced
2 tbsp Olive Oil
1 tsp Smoked Paprika
1 lb Chicken Sausage, sliced
1 cup Black Beans, drained and rinsed
Instructions
Preheat oven to 425°F
Arrange diced potatoes on a baking sheet
Add olive oil and smoked paprika; toss thoroughly
Roast potatoes 35 minutes or until crispy
While potatoes roast, heat skillet over medium heat
Add sliced chicken sausage; cook 5-7 minutes or until browned
