4 boneless, skinless chicken breasts (6 oz each)
1 tsp black pepper
Salt to taste
8 slices thick-cut turkey bacon
1/2 cup pure maple syrup (Grade B recommended)
3 cloves fresh garlic (minced or paste)
1/4 cup low-sodium soy sauce (gluten-free optional)


Instructions

Preheat oven to 375°F
Cook turkey bacon in a cold skillet over medium heat until crispy, 6-8 minutes
Remove bacon and most of the fat, reserving 2 tbsp
Season chicken with pepper and salt
Sear in reserved bacon fat 4-5 minutes per side
Mix maple syrup, garlic, and soy sauce in a bowl
Pour sauce over chicken, bring to a simmer, and bake 20 minutes
Increase oven to broil, add remaining bacon to top, and caramelize for 2 minutes

Notes

Substitute regular turkey bacon with halal-certified bacon
Chicken will release its own fat during cooking
Reserve more bacon fat if turkey bacon is lean
Best served 30 minutes post-baking for optimal flavor
