Sweet, ripe banana mini muffins with a tender crumb and optional chocolate or raisins. Simple pantry ingredients come together in minutes for handheld breakfasts or snacks.
Ingredients
1–2 ripe bananas
1 large egg
½ cup all-purpose flour
2 tbsp sugar or honey (optional)
¼ tsp baking powder
Pinch salt
2 tbsp melted butter or oil
1 tsp vanilla extract (optional)
¼ cup mini chocolate chips or raisins
Instructions
Preheat oven to 350°F (175°C)
Grease 24 mini muffin cups
Mash bananas in a bowl
Whisk in egg until smooth
Stir in melted butter/oil
Add flour, sugar/honey, baking powder, salt, and vanilla
Fold in chocolate chips/raisins
Spoon batter into prepared cups
Bake 12–15 minutes until golden
Notes
Use overripe bananas with blackened spots for maximum sweetness
Coconut oil adds mild coconut flavor
Raisins make a traditional, alcohol-free option
Almond flour works for gluten-free version
