Ingredients
1¾ cups (210g) all-purpose flour
1 tsp baking soda
1 tsp salt
½ tsp cinnamon
¾ cup (165g) brown sugar
½ cup (113g) butter, softened
2 large eggs
1¾ cups (430g) mashed bananas (3 large ripe bananas)
1 tsp vanilla extract
Instructions
Grease and flour a 9×5-inch loaf pan. Preheat oven to 350°F (175°C)
Whisk together flour, baking soda, salt, and cinnamon in a bowl
Cream butter and brown sugar in a stand mixer until light and fluffy
Add eggs one at a time, mixing until fully incorporated
Mix in vanilla extract
Gradually add mashed bananas, blending gently into butter mixture
Fold in flour mixture in three additions
Scrape batter into prepared pan and smooth top
Bake 55-60 minutes until golden and a toothpick comes out clean
Cool completely before slicing
Notes
Use overripe bananas with brown spots for maximum sweetness
Batter mix until just combined to prevent gluten overdevelopment
