Description
A hearty, cheesy casserole combining tortilla chips, seasoned ground beef or turkey, beans, and melted cheese. Ready in under 30 minutes with customizable layers for a family-friendly meal.
Ingredients
1 lb (450g) ground beef or turkey
1 packet (1 oz/28g) taco seasoning
1 bag (12 oz/340g) tortilla chips
15 oz (425g) can black or kidney beans, drained and rinsed
10 oz (285g) can diced tomatoes with chilies or fresh salsa
2–3 cups shredded cheese (Mexican blend or cheddar)
Optional toppings: sour cream, jalapeños
Instructions
Preheat oven to 350°F (175°C)
Grease a 9×13 inch (23×33 cm) baking dish
Cook ground beef or turkey over medium-high heat until browned (5-7 mins)
Drain excess fat using paper towels
Add taco seasoning to beef, stirring until coated
Stir in drained beans and diced tomatoes/chilies, simmer 3-4 mins
Spread tortilla chips evenly in the prepared dish as a base layer
Add half of the meat mixture, then one-third of the cheese layer
Repeat layers with remaining meat mixture and cheese
Top with remaining tortilla chips and any optional toppings
Bake for 15-20 mins, until cheese is melted and bubbly
Let cool slightly before serving
Notes
Substitute black beans for kidney beans or cheddar for Monterey Jack cheese.
For a spicier version, add diced jalapeños to the meat mixture.
Use fresh tortilla chips for crispiness; stove-fried chips help retain texture during baking.
