Ingredients
1 cup old-fashioned rolled oats
1 cup boiling water
1 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup unsalted butter, softened
1/2 cup honey
1/2 cup brown sugar
2 large eggs
Instructions
Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan.
In a medium bowl, combine the rolled oats and boiling water; let sit for 10 minutes to hydrate.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a large mixing bowl, cream the softened butter with honey and brown sugar until light and fluffy.
Add the eggs one at a time to the butter mixture, beating well after each addition.
Fold in the soaked oat mixture into the wet ingredients.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour the batter into the prepared pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool before serving.
Notes
Ensure you use old-fashioned rolled oats rather than instant oats to maintain the correct texture. You can top the cake with chopped walnuts or coconut shreds before serving for an extra crunch. Store in an airtight container at room temperature for up to three days.
