Ingredients

46 tablespoons butter, vegan butter, or olive oil
1 heaping cup shredded carrots
1 tablespoon dried minced onion
1 teaspoon dried minced garlic
2 tablespoons dried parsley flakes
1 teaspoon salt
Black pepper to taste
2 scant cups long grain white rice
8 cups chicken stock (low-sodium)
8 ounces skinless, boneless chicken breasts


Instructions

Melt 4-6 tablespoons of butter (or oil) in a 6-quart pot over medium heat
Sauté shredded carrots until softened and golden, 3-4 minutes
Add dried onion, garlic, salt, and pepper; cook for 1 minute
Stir in rice, incorporating butter and aromatics
Pour in chicken stock and bring to a boil
Add chicken breasts flat to the pot
Sprinkle dried parsley flakes on top
Reduce heat to low, cover, and simmer for 20 minutes
Remove cover and let sit for 5 minutes before fluffing with a fork
